<P>PROBLEM TO BE SOLVED: To provide a method for producing frozen noodles excellent in freezing efficiency in frozen noodle production, suitable for mass-production and requiring no conventionally used container for holding noodle balls and no long conveyance passage for circulating the containers, and to provide an apparatus for the method. <P>SOLUTION: The method for producing the frozen noodles comprises freezing with a front stair freezing apparatus 1 part of noodle balls which are each subdivided into one of a given amount with a ball-taking machine 10 before rapidly freezing the noodle balls with the freezing apparatus. The front stair freezing apparatus 1 has a cooling chamber 2 of a required size, an endless belt-like conveying means 3 which performs synchronized movement along the longitudinal direction in the cooling chamber 2, and an auxiliary endless chain-like conveying means 4. The auxiliary conveying means 4 is placed paralelly with a noodle ball holding means 5. The noodle balls supplied from the ball-taking machine 10 are held in a space surrounded with a plurality of frame-like holding parts set on the noodle ball holding means 5 and a metal plate surface of the conveying means 3 adjacent to the bottom of the frame-like holing parts, and made to move in the cooling chamber 2 in a short time so as to freeze only the peripheral parts of the noodle balls. <P>COPYRIGHT: (C)2004,JPO |
