PROBLEM TO BE SOLVED: To provide a method and an apparatus for skinning a piece of meat with skin, which can be adapted also when the bond between the skin of the piece of meat with skin and the meat is weak or strong and can be skinned off without causing lowering of quality of the piece of the meat by applying excess force to the piece of the meat and a piece of linked skin having high utility value can be obtained. SOLUTION: In the skinning apparatus for skinning the piece of the meat with the skin while pressing a knife to the piece of the meat, a flat knife having dull tip of the blade is vibrated in a face parallel to a knife surface. The flat knife is urged with a spring from the backward, and the retreating amount in which the knife is forced back by pressing resistance force applied to the knife when skinned is detected by a displacement gauge and the frequency of vibration of the knife is changed based on the displacement.
