PRODUCTION OF GUMMY CONFECTION IN WHICH GRANULES ARE FIRMLY SECURED TO SURFACE WITHOUT RELYING UPON CHANGE IN AMBIENT MOISTURE AND HUMIDITY

PURPOSE: A method of making a gummy confection in which granules are firmly secured to the surface without relying upon the change in ambient temperature and humidity is provided. The product has improved heat and moisture resistances. CONSTITUTION: A gummy material(10) containing a sugar component and a gelling agent is formed, transglutaminase(30) is applied to the surface of the formed gummy material and then granules(20) are attached to the surface of the gummy material in which the transglutaminase is solubilized in the gelling agent to give a gummy confection(100). The gelling agent is gelatin and pectin. The granules have a spherical shape.
