An optical sensing assembly (46) is adapted for use in association with a separation device having a separation zone associated with umbilicus (100) in which red blood cells and plasma are separated from blood. The assembly (46) comprises a controllercommunicating with and having different, selectable functions for operating first optical sensing unit (506A, 508A) associated with a red blood cell outlet path (104) that removes red blood cells. The controller also communicates with a second optical sensing unit (506B, 508B) associated with a plasma outlet path (106) for removing plasma.
