Composition of composite structure comprises: an amorphous carbohydrate phase with a glass transition temperature above room temperature, a crystalline phase and a third phase comprising one or more substances (I) selected from flavors, volatile substances and substances sensitive to external agents, where the third phase is dispersed in the other two phases with the aid of an emulsifier. Independent claims are also included for: (1) process for producing a composition as above, comprising mixing carbohydrates and crystalline compounds in powder form, mixing the emulsifier with (I) and adding water to form an emulsion slowly incorporating the emulsion into the powder mixture while stirring and extruding the mixture; and (2) process for producing a composition as above, comprising mixing carbohydrates and crystalline compounds in powder form, mixing the emulsifier with (I) slowly incorporating the mixture from step (b) into the powder mixture while stirring, adding water and extruding the mixture. |
