摘要 A bakery assembly has a dough kneading cell (23) drive (27) whose operation is regulated. During the transfer time-frame, the cell moves more slowly at right angles to the transfer unit (13, 14, 18), than at other times during normal operation. A bakery assembly (1) kneads dough and has a dough feed unit (3, 5) and a dough portioning station (5, 13, 14, 17). The assembly further has a dough kneading unit (19, 36) and a transfer unit which transfers portions (11) of dough in succession from a portioning chamber (12) to the kneading station (19, 36), within a pre-determined time frame. The dough kneading unit has a kneading cell (23) with a drive unit (27) which effects a relative movement by the transfer mechanism (13, 14, 18) at right angles to the transfer unit. The assembly further has a dough removal unit (35, 39). During the transfer time-frame the kneading cell drive moves more slowly at right angles to the transfer unit, than at other times during normal operation. During the transfer time-frame, the kneading cell is static. Also claimed is a commensurate operating process with electronically synchronized equipment.
