PURPOSE: Provided is a manufacturing method of cheese without lactose that causes lactose intolerance by converting lactose into lactate in raw milk by ultrafiltration or inoculation of lactic acid bacteria. CONSTITUTION: A manufacturing method of cheese without lactose is characterized by the steps of: inoculating lactic acid bacteria into raw milk to convert lactose into lactate; and adding base to the raw milk to prevent it from acidification. Therefore, the raw milk maintains neutrality to prevent inhibition effect of the lactate on the lactic acid bacteria. The raw milk is characteristically concentrated to 20-80% to omit the separation process of whey from curd.
