A method of producing a starter culture comprising the steps of: (i) supplying a stock inoculum material comprising a concentrate of starter culture organism cells such as a lactic acid bacterial species, Bifidobacterium, Propionibacterium, Staphylococcus, Micrococcus, Bacillus, Enterobacteriaceae, Actinomycetes, Corynebacterium, Brevibacterium, Pediococcusm, Pseudomonas, Sphingomonas, Mycobacterium, Rhodoccocus; (ii) directly inoculating a cultivation medium with a subset of said stock inoculum material comprising a concentrate of starter culture organism cells; (iii) propagating said starter culture organism cells in said cultivation medium for a period of time sufficient to produce a desired amount of said cells; and (iv) harvesting the propagated cells to provide a starter culture. The starter culture may be used for the inoculation of milk which is further processed to obtain a dairy product.
