METHOD FOR PURIFYING YELLOW PIGMENT OF GARDENIA, AND PURIFIED YELLOW PIGMENT OF GARDENIA

PROBLEM TO BE SOLVED: To provide an improved method for obtaining a yellow pigment of gardenia, wherein a solution of a yellow pigment of gardenia in an ethanol/water mixture forms no insoluble matter even when the solution is stored at a low temperature.

SOLUTION: An objective yellow pigment of gardenia can be more efficiently obtained by treating a gardenia extract with a chelate resin without subjecting it to treatment with an adsorbent resin or a membrane.
