<P>PROBLEM TO BE SOLVED: To provide low-fat sausage not mixed with any fat other than that contained in red meat in view of consumer's health intention, and having favorable springy and juicy palate feeling while fat content contained in the sausage is suppressed below 3wt.%; and to provide a method for producing low-fat sausage. <P>SOLUTION: The low-fat sausage 1 is produced so as to reduce fat contained in raw material meat, and dispersedly contains a gelled starch decomposition product 2, a protein decomposition product 3 and granular high polymer gel 4. <P>COPYRIGHT: (C)2004,JPO |
