PURPOSE: Provided is a method for processing green peppers which comprises the steps of removing a stalk of washed green peppers, finely cutting green peppers, removing seeds therefrom, grinding, drying and quick freezing red peppers, thereby removing stalks and seeds of green peppers prior to drying and saving the drying time and storage costs as well as providing fresh green peppers. CONSTITUTION: A method for processing green peppers comprises: washing green peppers with water; removing a stalk of the washed green peppers and finely cutting them; washing the cut pieces of the green peppers to remove seeds therefrom and grinding them; drying the ground green peppers to a moisture content of 25 to 45% by weight and quick-freezing them to -30 to -50deg.C; and storing frozen green peppers at -30 to -10deg.C.
