Preparation of sterilized meat of fowl or rabbit comprises placing meat in can, filling can with aqueous solution of additive in form of antioxidant acid and at least two sodium and/or potassium salts ensuring preserving hardness of bones and firmness of skin and flesh, closing the can and steam-sterilizing by heating in autoclave. Independent claims are also included for (1) sterilized meat obtained using process as claimed, and having appearance and structure of original fresh meat; (2) additive for preservation of carved or entire fowls or rabbits comprises citric acid, sodium citrate, sodium carbonate and sodium bicarbonate |
