PURPOSE: A method for manufacturing chicken-cheese dumplings by covering a whole eviscerated chicken with cheese, wrapping it with dumpling skin and then frying in oil is provided. The manufactured dumplings are made in a cutlet shape and has a good taste and flavor. Therefore, it satisfies the consumers taste. CONSTITUTION: A chicken is heated in water containing seasoning stuffs comprising Welch onion, garlic, salt, MSG or the like for 20min under pressure and then for 10min under normal pressure, cooled for 5 to 8hr at room temperature and then deboned. Thereafter, 1kg of the deboned chicken meat is seasoned with 250ml of fruit juice, kelp, black pepper, ginger, garlic and seasoned salt, marinated for 8 to 10hr and cooled. The cooled chicken meat is frozen for 12hr or more at -40deg.C, cut into a thickness of 1 to 2cm and a size of 5 to 8cm after thawing and formed under pressure into a chunk. The chunk is covered with cheese, wrapped with dumpling skin and fried in oil. |
