FIELD: technology of canning industry. SUBSTANCE: invention proposes a method for producing preserves "Natural fruits". Method involves preparing raw, its packaging into container in combination with boiled water, sealing and sterilization. Before packaging a preparation is added to boiled water. The preparation is prepared by sequential extraction of biomass of micromycetes Mortierella hygrophila with nonpolar extractant in supercritical state, water, alkali, water, acid, water, alkali and water and the following combination of the first extract with solid residue. The preparation is added in the amount 0.2-0.5% of preserves mass. Invention provides improving organoleptic properties and to reduce corrosion activity of the end product.
