<P>PROBLEM TO BE SOLVED: To provide a method for producing boiled young sardines, by which the boiled young sardines having a good taste and a high quality and hardly causing the deterioration of the quality for a long time can be obtained without adding an additive. <P>SOLUTION: This method for producing the boiled young sardines is characterized by charging fresh water 8 and ocean deep water 9 into a heating tank 5, respectively to obtain the heating processing liquid 6, supplying salt 10 to the heating processing liquid 6 to adjust the salt concentration of the heating processing liquid 6, boiling the heating processing liquid 6, and then charging and boiling raw young sardines b in the boiled heated processing liquid 6 to obtain the boiled young sardines b2. <P>COPYRIGHT: (C)2004,JPO |
