PROBLEM TO BE SOLVED: To provide a vacuum cooling apparatus not causing a bumping phenomenon, because repair modification can be carried out according to the case even if sudden temperature change occurs and capable of suppressing occurrence of the phenomenon in which tightening of a food occurs when the food is thawed when the food is particularly cooked rice. SOLUTION: The vacuum cooling apparatus 1 is equipped with a refrigerator 2 capable of storing foods, an evacuation means 3 connected to the refrigerator 2 and capable of discharging a gas in the refrigerator 2 and a outside air-introducing means 4 for releasing a vacuum state in the refrigerator 2. In the vacuum cooling apparatus 1, a temperature sensor 8 and a pressure sensor 9 are provided in the refrigerator 2 and a pressure controller 7 for controlling the pressure in the refrigerator along a set pressure curve in the refrigerator 2 by detecting the pressure in the refrigerator 2 by the pressure sensor 9 and operating the outside air-introducing means 4 based on the detected signal from the pressure sensor 9 is provided and a temperature of the food is detected by the temperature sensor 8 and operation of the outside air-introducing means 4 is controlled based on the detected signal from the temperature sensor 8.
