The present invention is related to the food industry particularly relates with a process for obtaining animal protein, characterized for comprising the following steps: a) Reception of raw material apt and free from contaminants; b) Milling of the raw material into a paste fine-mesh no larger than 50 or smaller to generate the fluid phase with an average viscosity of 17,000 centipoises; c) inclusion of citric oil in a 1 to 1 relation, a unit of fluid phase of material per a unit of citric oil at temperatures ranging between 10 to 60¦C, in continuous agitation during 2 to 4 hours or more; for degreasing raw material and separating the protein by precipitation; d) separation of the solid phase by centrifugation at ambient temperature; e) pre-drying of the separated solid phase; d) decantation of omega III and citric oils for separating them from the liquid phase, followed by a nano-filtration to obtain pharmaceutical omega type oils and recovery of citric oil; g) distillation for obtai ning of water contained in the raw material; h) milling of the solid phase with mesh no smaller than 325; i) total drying by an electric drying system; j) sterilization with ultraviolet rays and protein packaging.
