<P>PROBLEM TO BE SOLVED: To provide a liquid sweetener composition which is readily handleable compared with natural liquid honey (e.g. having readily weighable, readily flowable, readily cleanable and readily storable properties), having good keeping quality even when applied to foods, having readily mixable (under stirring) and readily homogenizable physical properties even in low-temperature food and having low calorie and normal-temperature keeping quality while retaining palatability of natural honey. <P>SOLUTION: The composition comprises the honey and a sweetener having high degree of sweetness in an amount of 0.4-5.0 dried pts. wt. expressed in terms of sucrose from the degree of sweetness, a low-calorie vegetable fiber or/and low-calorie sugar in an amount of 0.2-3.1 dried pts. wt. and water in an amount of 0.4-6.1 pts. wt. based on 1 dried pts. wt. honey. <P>COPYRIGHT: (C)2004,JPO |
