<P>PROBLEM TO BE SOLVED: To provide a sporulation inhibiting and spore germination inhibiting agent enabling the sterilization and preservation of a food, etc., contaminated with microorganisms forming heat-resistant spore by a treatment of the level of cold sterilization avoiding the conventional hot sterilization condition causing deterioration of the food quality. <P>SOLUTION: The sporulation and germination inhibiting agent for sporulating bacteria contains 1,5-anhydrofructose. Food is protected from the contamination with sporulating bacteria by the cold sterilization of the food in the presence of 1,5-anhydrofructose at <100°C. <P>COPYRIGHT: (C)2004,JPO |
