Carotenoid dye composition is produced by mixing a carotenoid dye of natural origin with oil to obtain an oil-phase component by heating, mixing with an emulsifying agent and a water-phase component and emulsifying the resulting mixture. Carotenoid dye composition having a formulated color value, E 105> 1cm, of 2550, is produced by mixing a carotenoid dye of natural origin having an acid value of upto 10 and containing 5 wt.% acetone insoluble component with oil to obtain an oil-phase component by heating, mixing with an emulsifying agent and a water-phase component and emulsifying the resulting mixture.
