<p>The assembly (1) for baking bakery products, has a preparation station (2,7,10) for the dough portions, a yeasting stage (16) and a multi-level oven (39). A transport system (18) carries the dough to the yeasting station, and a conveyor (38) takes the prepared dough portions to the oven. The baked products are taken from the oven by a take-off system (76a). The dough portions are fed separately or in batches to the yeasting station, where they are yeasted continuously, to give a continuous feed to the oven.</p> |
