PROBLEM TO BE SOLVED: To provide a method for producing confectionery of high quality of the same level as conventional confectionery and at the same time, confectionery excellent in producibility compared to conventional one through impregnating a permeable food material into a foam-containing food material and to provide an apparatus for the method. SOLUTION: This method for producing the confectionery of the permeable food material impregnated into the foam-containing food material comprises at first deaerating only the foam-containing food material under reduced pressure, soaking the foam-containing food material in a deaerated condition into the liquid permeable food material, and impregnating the permeable food material into the foam-containing food material by returning to normal pressure.
