PROBLEM TO BE SOLVED: To provide a dried fish using salmon as raw material, well boiled and roasted to dry it so as to obtain well-flavored "broth". SOLUTION: The dried fish is produced by cutting salmon finishing spawning or being out of spawning period to separate its head and tail from the fish body so as to fillet the salmon into two or three pieces, repeating, 4-6 times, a set of processes of well boiling the filleted pieces of the salmon at 90°C for 1 hour and grilling the boiled pieces by direct firing in a short period of time to dry them, and thereafter drying the resultant dried fish in the sun for several days.
