MEDIUM CONTAINING WATER WITH INCREASED VISCOSITY, METHOD FOR PRODUCTION AND USE THEREOF

The invention relates to a medium containing water which has increased viscosity. Said medium contains a gellable polymer component, comprising phenolic substituents, which is modified with the help of oxidases. The invention is characterised in that the modification occurs by means of a) a protein having polyphenol oxidase activity and/or b) an enzyme mixture containing hydrolases, oxidoreductases and peroxidases. The correspondingly modified medium is a gel, preferably in a (partially) dried or (partially) rehydrated state, whereby the viscosity of the strength of the gel can be controlled in a specific manner and the general viscosity of strength of the gel can become stable again after a drying step and rehydrating. The medium containing water does not contain any secondary products which affect the quality of the gel or the sensory properties thereof in a negative manner. The invention relates to a medium containing water, as well as to a method wherein corresponding media with increased viscosity can be produced and oxidoreductases, peroxidases, hydrolases and/or catalases are used. The media containing water can be used in the food industry, in cosmetics and for pharmaceutical purposes.
