The invention concerns inclusion complexes of precursors from a natural source of organic isothiocyanates, in particular having bacteriostatic, bactericidal and/or fungicidal properties, in cyclodextrins.The isothiocyanate may meet the formula:in which R<1 >is for example the benzyl group. The precursor is a glucosinolate for example.The complex formed from a precursor may be converted into a complex of the corresponding isothiocyanate through enzymatic hydrolysis with myrosinase.
