PROBLEM TO BE SOLVED: To provide a method of operating a food filling machine which can immediately detect a failure in checking during inspection and an occurrence of an abnormal value, and as a result, can reduce the load in inputting and summing up the daily report of inspection without errors in checking. SOLUTION: The method of operating a food packaging and filling machine for forming a wrapper mainly comprising paper, filling up food and sealing a paper container is for operating the filling machine whose operation is monitored by monitoring data from predetermined monitoring points. The method includes steps of sticking a bar code containing information regarding the monitoring point to each of the points, reading the bar code at the monitoring point by a bar code reader, inputting operation status data to the bar code reader, and monitoring the operation status based on the information read by the bar code reader and the data input into the bar code reader.
