PROBLEM TO BE SOLVED: To provide an apparatus for producing noodles in which many kinds of noodles including curly noodle can simply be produced by automatic operation even for beginners. SOLUTION: The apparatus for producing noodles is equipped with a rolling mill roll device 1, a cutter 2, first and second belt conveyers 4 and 5 installed in the lower part of a cutting blade 3 of the cutter 2 and a controller 8 for controlling the whole. Since all set values of the apparatus required for each customer, e.g. noodle thickness, weight, length, linear/curly noodle and noodle strip width can be memorized in the controller 8 and called from the controller 8, even beginners can readily carry out changeover production of many kinds of noodles. When producing the curly noodle, a waving box is adopted and noodle is received by a first-step slow conveyer and transferred to a second-step belt conveyer operated at a speed of about 3 times and clearly separated for each meal at a same time and then, automatic packaging of the noodle in the next process can be carried out.
