The present invention is a process for producing an aliphatic acid ester of carbohydrate comprising the steps of preparing an emulsion containing a salt of aliphatic acid and aqueous solution of carbohydrate or its derivative, obtaining a solid by removing water from said emulsion, and reacting said solid and an aliphatic acid ester.
