PURPOSE: A deep skinning machine is provided to remove meat and blood portions in straight along a direction of skin, net and tail parts among fillet of salmons or trouts at once. CONSTITUTION: The deep skinning machine comprises an input part(2); a cutting part(3) for cutting skin(58) and meat and blood in the fillet(57) introduced through the input part(2) by applying different pressures to the same; an output(4) for discarding the cut skin(58) and the meat and blood; and a driving part for moving the input part, the cutting part and the output part. The input part(2) includes an input conveyor(6) and a pressing conveyor(7) on a pivot arm(8) having a number of elastic belts. The cutting part(3) has a tooth drum(14), a band knife(15) and a housing(16) for the knife.
