The invention relates to extracts of fruits of astrocaryum vulgare, pulp and kernel, which are characterised in that said extracts have an anti-inflammatory therapeutic activity which is demonstrated in the carrageenan test and which are intended for oral or intraperitoneal administration. Said extracts are made up, in particular, of the unsaponifiable part of oils extracted by a non-polar hydrocarbon solvent. The anti-inflammatory preparations obtained from said extracts are used in pharmaceutics, dietetics and cosmetics.
