FIELD: food industry. SUBSTANCE: after extracting bitter principles out of citrus fruits with nonpolar liquefied gas one should treat them with preparation obtained out of Mortierella pulchella micromycete biomass according to the preset technology. After that, biomass should be kept, treated with liquefied ammonia gas at pressure being above atmospheric one, then one should decrease pressure up to atmospheric at the rate to provide fruits' freezing. This enables to exclude opalescence of juice. EFFECT: higher efficiency. 2 ex |
