<P>PROBLEM TO BE SOLVED: To provide oil-in-water emulsion having favorable meltability to the mouth while having freezing resistance. <P>SOLUTION: The oil-in-water emulsion contains a compound crystal comprising triglyceride represented by S<SB>1</SB>MS<SB>2</SB>(S<SB>1</SB>and S<SB>2</SB>each represent a saturated fatty acid, and M represents a monounsaturated fatty acid), and triglyceride represented by MS<SB>3</SB>M (S<SB>3</SB>represents a saturated fatty acid, and M represents a monounsaturated fatty acid). <P>COPYRIGHT: (C)2004,JPO |
