PROBLEM TO BE SOLVED: To provide a parching device where parching is always carried out under stable conditions to obtain tea similar to pan-fired one. SOLUTION: The parching device 1 comprises a nearly cylindrical member freely rotatable around an axis, and has the followings: a parching drum 3 the side face of which is almost closed and which transports tea leaves from one end to another end thereof while holding the tea leaves, a burner 10 heating the outer peripheral face of the parching drum 3, an input port 8 through which raw tea leaves are charged into the parching drum 3, an output port 9 through which the tea leaves are taken out from the parching drum 3, and a steam outlet for discharging the steam generated from the tea leaves in the parching drum 3. The parching drum 3 has a steam outlet 15 provided at the other end side thereof, and also has a blower 22 for forcedly discharging steam at the other side through the steam outlet 15.
