PROBLEM TO BE SOLVED: To provide a pressure sterilizer with which material to be sterilized in a chamber can smoothly be cooled via cooling water after subjecting the material to pressure sterilization. SOLUTION: This pressure sterilizer comprises the chamber 5 storing the material to be sterilized 3 for sterilizing the material, a feeding/steaming means for feeding steam into the chamber or generating steam inside the chamber, a water supply means for supplying water into the inside of the chamber, and a pressurizing means for supplying air into the inside of the chamber. The pressure sterilizer functions as follows: supplying pressurized steam and pressurized air into the inside of the chamber to sterilize the material to be sterilized followed by supplying cooling water and also pressurized air into the inside of the chamber via the water supply means to cool the material to be sterilized under pressure. The sterilizer is provided with a sprinkling disk 52 positioned above the material to be sterilized in the chamber and having a plurality of through holes.
