PURPOSE: A composition of a dressing material containing ginger as a main ingredient, together with sodium benzoate as a preservative, sodium chloride, a browning-inhibiting agent and/or a solid-liquid separation-inhibiting agent is provided. It inhibits the generation of a unpleasant smell from ginger during the storage and maintains the characteristic flavor of ginger for a long period of time. CONSTITUTION: A composition of a ginger-based dressing material contains ginger as a main ingredient, sodium benzoate as a preservative and additionally sodium chloride, a browning-inhibiting agent and/or a solid-liquid separation-inhibiting agent. The ginger is subjected to blanching as a pretreatment. For an example, crushed ginger is mixed with 0.002% by weight of sodium bisulfite, 0.2% by weight of L-cysteine, 0.1% by weight of sodium benzoate, 0.1% by weight of modified starch and 0.1% by weight of xanthan gum, based on the total weight of a ginger-based dressing material.
