PURPOSE: A method for preparing noodles using potatoes instead of starch, together with lotus powder or an aqueous gelatin solution as a tacky adhesive and wheat flour is provided. The prepared noodles have a chewy texture and can be prepared at lower cost than the conventional method using starch. CONSTITUTION: The raw material of noodles composed of 35 to 45% by weight of wheat flour, 35 to 45% by weight of potato, 8 to 10% by weight of lotus powder, 4 to 5% by weight of bean powder, a small amount of oil and a suitable amount of table salt is mixed and kneaded with water. The dough is then sliced to give noodle strips.
