<P>PROBLEM TO BE SOLVED: To obtain a quickly dissolvable emulsifier for beverages, excellent in stability, and efficiently usable in production of beverages. <P>SOLUTION: This emulsifier for beverages combinedly contains (A) a polyglyceryl fatty acid ester having ≥8 average degree of polymerization, (B) a sorbitan fatty acid ester having ≥6 HLB value, and (C) a sucrose fatty acid ester having ≥6 HLB value. The combination rate of (A), (B) and (C) is preferably 30-70 wt.% of (A), 10-50 wt.% of (B) and 5-30 wt.% of (C).
