METHOD FOR MANUFACTURING RICE COATED WITH CALCIUM AND CHITOSAN

PURPOSE: Provided is a method for manufacturing rice which is uniformly coated with calcium and chitosan, prevented from breaking, has long-term storageability, and increases the absorption of calcium into a body. CONSTITUTION: A method for manufacturing rice coated with calcium and chitosan comprises the steps of: mixing 5.0-30.0 wt.% of calcium lactate, 0.1-1.0 wt.% of water soluble chitosan, 5.0-30.0 wt.% of sugar syrup, 0.5-2.0 wt.% of casein phosphopeptide with 37.0-89.4 wt.% of water; 10.0-100.0 micrograms of vitamin D3 to the 1000g of the mixture and stirring them to give a coating solution; spraying rice with the coating solution with rotating it at 20-40rpm and supplying air to it; and drying the rice at low temperature to the water content of 15-17%.
