摘要 PROBLEM TO BE SOLVED: To provide bread dough with mold proof efficacy, and to provide a method for producing bread using the dough and bread obtained by the method. SOLUTION: This invention relates to the dough containing a yeast as a culture product obtained by culturing a lacto bacillus in a medium or a processed product of the same or that belonging to the Saccharomyces and generating≥2.0 ml of carbon dioxide gas per 1g of the dough at 38°C within 60 min in the dough containing 5% sugar and expanding 1 ml of the dough to 1.2 ml, and the method for producing bread using the dough and bread obtained by using the same are disclosed.
