PROBLEM TO BE SOLVED: To provide hard candy with throbbing entertainment, having a smooth, shiny but slightly rough surface, and smooth palate feeling as well as excellent in appearance. SOLUTION: The hard candy with≥5 wt.% of an oil content has surface roughness of 0.5-1.6μm by Ra representing arithmetical average roughness, another version of the candy with <5 wt.% of an oil content has surface roughness of 0.05-0.8μm by Ra. The combination of the above two types of candy has surface roughness of 0.05-1.6μm by Ra. The method for producing the hard candy comprises a process of boiling hard candy dough, a forming process of forming the boiled hard candy dough, and an after treatment process of reducing the surface roughness while softening the surface of the formed hard candy dough via heating.
