摘要 PROBLEM TO BE SOLVED: To provide a method for producing a doughnut having excellent palatability, appearance and retainability of the taste while decreasing the absorption of oil. SOLUTION: The method for the production of doughnut comprises the formulation of main raw materials with 1-20 wt.% oil-and-fat pregelatinized starch having an oil-and-fat separation degree of≤50% and an adhesion degree of≤5% and produced by heating a starch slurry in the presence of oil-and-fat.
