The invention relates to a method for coating the surface of pieces of meat, fish or other food products (LG) with foodstuff finishing substances (LV) that have a high viscous, pasty and/or low viscous composition, or with substances of this type that contain edible solid particles. The method is characterised in that the meat, fish or foodstuff product (LG) that is to be finished is coated with said substance by means of a viscous spray device, which is equipped with a compressed gas supply and comprises a plurality of spray-coating nozzles (3), located in a spray-coating chamber (2), the direction of said nozzles being adjustable. According to the invention, at least one viscous or suspended material pump, peristaltic pump, "Monoh" pump or similar is used as the transport organ (41) for transporting the foodstuff finishing substances to the spray-coating nozzles. The invention also relates to a device for carrying out said method. |
