<P>PROBLEM TO BE SOLVED: To provide a mildewproofing agent for a food, added to the food such as bread, noodles and flour for Tempura (deep batter fried food) to impart at least one function selected from improvement of mildewproofing properties and storable duration, keeping of freshness and prevention of quality deterioration thereto. <P>SOLUTION: The mildewproofing agent for the food contains a silk fibroin and/or a protein derived from the silk fibroin as a main component. The mildewproofing agent containing the silk fibroin and/or the protein derived from the silk fibroin as the main component can impart the function selected from the improvement of the mildewproofing properties and the storable duration, the keeping of the freshness and the prevention of the quality deterioration to the food by being added thereto. <P>COPYRIGHT: (C)2004,JPO |
