A process separates an intermittent secondary aqueous phase from a primary oil phase. In a first process step, water droplets of pre-determined and monitored size are formed. In a second process step the water droplets coalesce and are separated. During the second step the mixture of oil and water is surrendered to a multi-phase separator unit on which the coalescing water droplets are guided through a downward-inclined plane or are released into a sump trap. The process also incorporates a mechanical emulsifying breaker-stage and one or more hydrophobic membranes. Also claimed is a commensurate assembly which is a combination of a mixer which determines the size of water droplet, a distributor, and a pressurized de-watering system with multi-phase separation profiles. After abstraction of water, the dehydrated oil is fed through an automatic water detection system.
