PROBLEM TO BE SOLVED: To accurately remove a calyx section from the image of an acquired agricultural product, and to accurately determine the quality of an agricultural product based on the image where the calyx section is removed in an apparatus and method for determining the quality of the agricultural product.
SOLUTION: A binarization differential image regarding luminance in the image of the acquired agricultural product 1 is created, the calyx section is extracted based on the on/off distribution of the pixel of the binarization differential image, and the quality is determined according to the image of the agricultural product 1 where a region corresponding to the extracted calyx section is removed.
