摘要 PROBLEM TO BE SOLVED: To provide a freezing method capable of preventing and suppressing the deterioration of quality of foods. SOLUTION: The freezing method is characterized by having a first process of treating a frozen object 5 with cluster fractionation water in which the cluster of water is fractionated and a second process of irradiating a magnetic field whose intensity varies with time to the frozen object 5 under a low temperature environment. The second process can be carried out by using a freezing apparatus 10 comprising a cluster fractionation apparatus 1A which fractionates the cluster of water in the frozen object 5, an installation portion 7 where the frozen object 5 is installed, a heat exchanger 8, and a fan 9 which circulates the cold. The cluster fractionation apparatus 1A includes two or more magnetic field generators 2A, 2B and 2C which give the magnetic field to the frozen object 5 and change the intensity of the magnetic field with time, and a magnetic field control apparatus 3 which controls the intensity of the magnetic field generated by each magnetic field generator.
