<P>PROBLEM TO BE SOLVED: To provide a quality improver for seafood-paste products preventing whiteness decrease and resilience decrease, having no influence on the flavor of seafood-paste products, and improved in releasability of the seafood-paste products heated after being charged into a vessel or a package; and to provide seafood-paste products; and to provide a method for improving the quality of seafood-paste products. <P>SOLUTION: The quality improver for seafood-paste products contains polysorbate.
