<P>PROBLEM TO BE SOLVED: To obtain a flavoring agent containing HEMF (4-hydroxy-2 (or 5) ethyl-5 (or 2) methyl-3 (2H) flanone) in a high concentration, and to provide a method for profitably producing the flavoring agent, by which the HEMF can be produced and accumulated in a high concentration in a short period. <P>SOLUTION: The flavoring agent is characterized by containing HEMF in an amount of ≥400 ppm. The flavoring agent further contains isoamyl alcohol in an amount of ≤40 ppm. The method for producing the flavoring agent is characterized by comprising the following processes. (1) The first process for thermally treating a mixture liquid of a malt-digested liquid, a sugar and amino acids. (2) The second process for inoculating and culturing yeast in a culture liquid containing the thermally treated liquid obtained by the first process. <P>COPYRIGHT: (C)2004,JPO |
