<P>PROBLEM TO BE SOLVED: To provide a method and a system, or the like, for obtaining tasty cooked rice by coating cooked rice with starch, a decomposition product thereof, water-soluble polysaccharides, protein, or the like, to improve the color/gloss/shape, flavor, mouthfeel, glutinousness, resilience, hardness and taste of the cooked rice. <P>SOLUTION: The method for cooking rice using a cooking additive comprises the steps of washing, as necessary, rice grains to be cooked to remove rice bran, soaking, as necessary, the resultant rice grains in water, adding the cooking additive obtained by finely crushing rice grains to the soaked rice grains, and cooking the resultant soaked rice grains. Further, by adjusting the quantity and/or kind of the above additive, the objective cooked rice most suitable to the person in question can be obtained. <P>COPYRIGHT: (C)2004,JPO |
