<P>PROBLEM TO BE SOLVED: To provide a method for producing highly nutritious Natto (fermented soybean) food such as powdery or flake dried Natto having no ammonia smell and good preservability, and containing high density spores. <P>SOLUTION: The method for producing Natto food such as dried Natto comprises the following process for improving a nutritive value of Natto: forming soybeans into powdery state or flake state, inoculating Bacillus natto, maintaining the Bacillus natto at 40-50°C for 15-20h under the atmosphere of 60-85% humidity to make the thus treated soybean normally ferment followed by drying the fermented soybean by 35-50°C hot air under aerobic environment using a hot air dryer so as to obtain dried processed Natto with wetness of ≤10%. <P>COPYRIGHT: (C)2004,JPO |
